Winemaking Notes:
We produce our Rose as a natural consequence of making decisions we believe improve our red wines. That is, to aid the structural development of certain vineyards, we will remove juice (or saignée) after as little as 4 and as much as 24 hours of skin contact. In 2008 this juice was made up of 60% Syrah, 35% Grenache, with the difference split between Mourvedre and Counoise. The 2008 Pax Rose was fermented in stainless steel barrels at a cool temperature by native yeast.
Tasting Notes:
Each time I have tasted this year’s Rose, I am reminded of a family breakfast tradition: Crepes filled either with butter, lemon and sugar, or warm strawberries and fresh cream. The Rose delightfully represents both of these: hints of citrus, the smell of warmed strawberries, a sweet creaminess balanced by a fresh delicious finish. Is it possible to suggest such a pairing for breakfast: 2008 Pax Rose and Crepes filled with strawberries and cream? If you have any house rules about drinking before 9 AM, then perhaps you can consider it for dessert!
